Peach Melba
what you need:
2 cups water
1/2 cup sugar
1 small vanilla bean
4 ripe peaches
8 oz raspberries (or buy raspberry sauce)
1/2 cup confectioners sugar
2 tspns lemon juice
4 scoops vanilla ice cream
how you make it:
Place the water, sugar, and vanilla bean in a medium pan and heat
while stirring to dissolve the sugar. Simmer syrup for 2 minutes.
Cut the peaches in halves and peel and remove the pits. Poach the
peaches in the syrup until barely tender. Remove the pan from the
heat and allow fruit to cool in the syrup. Chill well in the fridge.
Puree the raspberries in a blender with 1/2 cup sugar and lemon
juice. Strain and chill. Place a scoop of ice cream in each serving
dish, top with two well-drained peach halves, spoon raspberry puree
over the top. Serve immediately.
